About Jathipathri (Mace Spice)
Nutmeg is unique as it yields another spice known as mace. Mace is the dried aril that covers the nutmeg seed shell. It appears as a yellow-red to red soft broken layer surrounding the seed. The reddish pigment is lycopene, the same pigment found in tomatoes. Mace has a higher myristicin content and a superior aroma compared to nutmeg. Being thin, mace dries more easily than nutmeg. Mace and nutmeg are dried separately into two distinct spices.
